Meet Team Fatima

Under the guidance of our pastor, our parish staff strives to serve with joy, prayer, and a welcoming spirit—helping our community grow in faith, share Christ’s love, and feel at home at Our Lady of Fatima.

Kim Adamson

Business Manager & Bookkeeper

Kim is originally from Beavercreek, Ohio and has lived in Kentucky, Florida and now settled in Maryville, TN.


She received her B.S. from The Ohio State University and M.A. in Pastoral Theology from Barry University.


She has worked as business manager / bookkeeper for a Catholic high school, veterinary hospital and her husband's yacht repair business. She was also an office assistant and DRE for a Catholic church in Florida.


Kim is a background musician, playing harp not only here at OLOF but for weddings and different events in the Maryville, Knoxville area.

Elizabeth Borovy

Office Assistant

Elizabeth was born in North Carolina and made her way to the mountains of East Tennessee in 2009. She is married to her wonderful husband and are raising two sons together.


Although baptized Catholic as an infant, she did not come into the faith until 2017. The spark of devotion was rekindled as she embarked on a transformative path back to her spiritual roots through the OCIA program at OLOF.


With a heart dedicated to service, she has actively volunteered in various ministries of OLOF. These experiences have not only deepened her faith but have also equipped her with invaluable skills and insights for the roles that lie ahead on her journey as a staff member.


Her free moments are dedicated to spending time with her family and crafting.

Ana Carballo

Secretary

Ana was born in Zacatecas, Mexico, grew up in California. Been in Knoxville since 1996. She is a cradle Catholic married for 37 years and has three children and three amazing grandchildren.


Ana has been a parishioner of OLOF since 2020 after moving to Maryville.

This ministry has provided her the opportunity to fulfill a lifelong desire to use her cultural background and language skills to better serve Christ.

Christy Lee

Director of Music & Liturgy

Dr. Christy Lee leads a diverse career as a pianist, organist, chamber musician, vocal coach, conductor, educator and church musician. She has held academic posts at the University of Tennessee, Maryville College, Mississippi State University, and the College of The Bahamas. Recent international performances include appearances at CorHabana (Havana, Cuba), concerts with the Bahamas National Youth Choir (Nassau, Bahamas) and workshops at Semana de Música y Adoración (Denia, Spain).  Locally, Dr. Lee performs regularly with many arts organizations in the area including Knoxville Opera, Marble City Opera and Tennessee Valley Players. 


Originally from Starkville, Mississippi, she returned to East Tennessee in the summer of 2022 to join the staff of Our Lady of Fatima Catholic Church as Director of Music and Liturgy where she directs a variety of choirs and ensembles including “Coro Bilingüe,” a Spanish/English choir that provides music at Bilingual Masses throughout the liturgical year. 


2025 marks her third year as Director of the Knoxville Opera Chorus that performs not only in mainstage performances at the Tennessee Theater but also in outreach engagements throughout the community.


Dr. Lee holds a Doctorate from Florida State University, a Master’s degree from the Cleveland Institute of Music and a Bachelor’s degree from the University of Alabama.  She spent her childhood living in Spain as the daughter of Southern Baptist missionaries. Her love for culture, language and service was instilled in her by her parents and their lifetime dedication to Christian ministry. Christy now makes her home in South Knoxville and is a proud holder of a Dollywood Season pass.

Israel Miller

Facilities Manager

Israel was born in Tampa, Florida, and moved to Knoxville at age 20.

He now lives in Alcoa with his wife and their daughter.


A graduate of the Tennessee College of Applied Technology with a focus in HVAC/R, Israel brings both practical skills and a heart for service to his work.


Married for 13 years, he enjoys spending time with his family, playing guitar, and making music.

Jessica O'Boyle

Director of Religious Education

Jessica O'Boyle is originally from Middlesboro, Kentucky.


She earned her Bachelor’s degree in Special Education and a minor in Child and Family Studies from Eastern Kentucky University. Jessica completed her Master of Arts in Teaching with an Elementary Education certification (P–5) from the University of the Cumberlands.


Jessica has taught Pre-K through 3rd grades in both public and Catholic school settings. Jessica has been actively involved in children's religious education for 19 years. 


In her free time Jessica enjoys watching movies, reading, and spending time with her family and dog. She lives in Maryville, TN with her husband and four daughters.

Sarah Parsons

Family Life Coordinator

Sarah Parsons and her family joined Our Lady of Fatima parish when they moved to Tennessee in 2001. She grew up active in our parish where she participated in Faith Formation and Youth Ministry programs, sang in children's choir, served as an altar server, volunteered in Faith Formation as a youth volunteer, and received her sacraments of First Holy Communion and Confirmation.


Sarah's love for our parish lead her to continue volunteering with the Youth Ministry program while in college, and in 2018, she took a role on parish staff as the Middle School and Confirmation Coordinator. Sarah received her bachelor's degree in Psychology with a minor in Business from the University of Tennessee. She moved on to work at Catholic Charities of East Tennessee and then a role in HR before returning to ministry at the church.


Sarah feels passionate about working in ministry and continuing to make Our Lady of Fatima a place for all families to call home. She is excited to further our parish mission by engaging parishioners in all seasons of family life. She prays that she is able to "do something beautiful for God."


Sarah and her husband, Logan, met and grew up together at Our Lady of Fatima. They have four children, three here and one in heaven. In her free time, Sarah loves spending time with her family, going for walks on the greenbelt, fellowship with her small group, and a cup of coffee with a good book.

Luis Ramos

Pastoral Associate & Coordinator of High School & Young Adult Ministry

Luis is a native of Veracruz, Mexico, and has called East Tennessee home since 2000. He and his family became members of Our Lady of Fatima Parish in 2002, where he was deeply formed in faith and community life.


In 2012, Luis joined the parish staff and has since served in a variety of roles, beginning as Assistant to Religious Education and Youth Ministry and Office Administrative Assistant. He currently serves as Pastoral Associate and also coordinates High School and Young Adult Ministry.


Luis is a Certified Catechist through the Diocese of Knoxville Catechetical Formation Program (Aquinas College) and holds Youth Ministry Certification from Franciscan University of Steubenville. In Spring 2024, he completed Clinical Pastoral Education (CPE) at the University of Tennessee Medical Center, further deepening his pastoral care and ministry experience.


Active in the wider community, Luis serves on several boards of directors, volunteers with several organizations, and is a proud graduate of Leadership Blount Class of 2023. His passion for outreach began early, with a long history of community service in Blount County dating back to his teenage years. Luis additionally works as an interpreter with Blount Memorial Hospital since 2012.


Luis is a proud Mercy Associate of the Sisters of Mercy of the Americas, serving with joy and purpose in the spirit of Catherine McAuley. After discerning the call to live a life in the charism of Mercy, Luis began formation in 2014, did his initial covenant on February 14, 2015, and committed for life on March 17, 2018.
“Mercy Association is a characteristic of who I am. A response to a Call of Love. My response to God’s Love.”


In his free time, Luis enjoys learning, reading, exploring nature, and engaging with the arts.
